Green Bean Bundles–WINNER

Ingredients:

  • • 4 cans of WHOLE green beans
  • • 6 to 8 slices of bacon – each slice cut in half
  • • 1/2 cup brown sugar
  • • 3 tbsp of butter (not margarine)
  •  

Directions:

Fully drain green beans. Gather a stack of green beans in the palm of your hand, all facing the same direction. Wrap a 1/2 of slice of bacon around the middle of the green beans creating a bundle. Place seam side down in a 8×8 baking dish. Repeat process until all green beans are bundled. You should have roughly 10 to 12 bundles. Melt butter in a small bowl and stir in 1/2 cup of brown sugar OR enough brown sugar to form a paste. Place a spoonful of the sugar mixture on top of each bundle. Place in a 425 degree oven, uncovered. Bake 30 minutes until green beans begin to wilt slightly. Switch oven to broil and cook an additional 3 to 5 minutes or until bacon is browned on top.
 

 

 

Dr. Pepper Carrots

Ingredients:

  • • 1 pound carrots
  • • 1 cup sugar
  • • 1 can of Dr. Pepper
  •  

Directions:

Peel and half carrots and place in large pan. Cover with sugar and soda and cook on medium until carrots are soft and glaze forms. Finish with a little Morton sea salt.        video   

 

Zucchini Pizza

Ingredients:

  • • zucchini
  • • pizza sauce
  • • cheese
  • • pepperoni or other favorite pizza toppings
  •  

Directions:

if you can locate a zucchini big enough, cut it into slices and make little pizzas out of them (using the zucchini instead of crust). Surprisingly addictive. Spread sauce onto sliced zucchini. Top with cheese and other favorite pizza toppings. Bake in the oven at 400° until the cheese is melted.       video 

 

Mashed Faux-Tatoes

Ingredients:

  • • cauliflower
  • • 1 tbsp milk
  • • 1 cup shredded cheddar cheese
  • • salt and pepper to taste

 

Directions:

Chop cauliflower, then steam in microwave till tender but not mushy. Put cauliflower into a blender or food processor. Add a bit of milk. Start with a tablespoon; you can add more later if needed. If you add too much, it'll be soupy. Add shredded cheddar- about 1 cup. You can use more or less as desired. For Wally, I'd suggest MORE. 🙂 Blend to desired consistency. It should be near the consistency of mashed potatoes, but it will be grainier. Salt and pepper to taste.  video

 

Green Monster Spinach Smoothie

Ingredients:

  • • 1 frozen sliced banana
  • • 1 Tablespoon peanut butter
  • • 1/2 cup 0% Vanilla Chobani Greek yogurt
  • • 1 cup Unsweetened Vanilla Almond Breeze (or other kind of milk)
  • • 4 cups baby spinach (or more, or less)

 

Directions:

Combine all ingredients in a blender and blend until smooth.  video
